Great Minnesota Hotdishes
Join us in creating up to 15 sensational dishes using fresh ingredients without canned soups. These crowd-pleasing recipes are great for any potluck. You betcha! Recipes include: beef, pork and sauerkraut, pork loin with dried apricots and cherries, chicken cobbler with carrots, mushrooms and peas, just to name a few.
Bring to class:
- Supply fee of $15 cash paid to instructor at class.
- Containers to take home leftovers.

Eligible UCare members may get up to a $15 discount on many community education classes in Minnesota. Members must have UCare insurance at the time of registration and throughout the duration of the class. Members need to provide their UCare member ID number when registering for class over the phone. Limits and restrictions may apply.
Laurel Severson
Instructor
Laurel Severson is a graduate of the University of Minnesota with a double major in Home Economics and Education. She has worked in businesses throughout her career focusing on food – beginning with editing a series of 12 international cookbooks, testing recipes, and editing a British cookbook. Laurel worked at 3M for 30 years supervising the executive dining room, a snack bar, employees buffet, conference dining rooms and the special events such as retirement parties and 25 year anniversary parties before transferring into hospital foodservice and then the hotel industry. Laurel currently works in many Community Education districts throughout the metro area teaching participation cooking classes. She has traveled extensively including living in the Philippines for one year and in London for two years. An avid collector of cookbooks, Laurel generously shares culinary tips with students. She entertains extensively in her 1882 home and is an energetic volunteer within her St. Paul community. For example, one volunteer project includes heading up the kitchen crew to feed 500 for a spaghetti supper fundraiser.
